Toasted Rice Krispie Treats S’mores



1 stick (115g) unsalted butter

280g white marshmallows 

1/4 tsp fine sea salt

2 cups puffed rice cereal


50 white marshmallows

4 x 2.64oz (75g) Beyond Good 80% Pure Dark Chocolate Bar

25 Graham Cracker squares

  1. Line an 8-inch (20 cm) square baking or casserole dish. 
  2. Place the butter in a medium saucepan over medium heat and allow to simmer until it starts to brown and turn golden. Set aside. 
  3. Preheat the grill setting of your oven to the highest setting.
  4. Spread the marshmallows out on a lined baking sheet and place them under the grill until toasted and golden. Add the toasted marshmallows to the brown butter and return to the heat. Heat slowly on a low setting until melted. Stir in the salt and puffed rice cereal and mix until combined. 
  5. Press the marshmallow mixture into the prepared dish and allow it to cool at room temperature. 
  6. Break the Beyond Good 80% Cocoa Pure Dark Chocolate Bar in half and place it on top of the rice krispie treats. Cut around the chocolate to make sure you have an even square. Repeat with the remaining chocolate and rice krispie treats. 
  7. To assemble, place 6 of the graham crackers on a baking sheet, top them with a rice krispie treat square, the blocks of chocolate then the marshmallows. 
  8. Preheat the grill setting of your oven to the highest setting and place the baking tray into the oven. Grill the marshmallows until golden and toasted then remove from the oven and top with the remaining graham crackers.
