Cherry Pie Overnight Oats
A creamy, fiber-rich breakfast packed with protein and inspired by the sweet-tart flavors of a cherry pie.
Serves 2 | Prep time: 10 minutes | Chill time: 8 hours (overnight)
For the cherries:
- roughly 1 cup fresh cherries, pitted
- 1 lemon
- 1 Tbsp chia seeds
For the oats:
- 2 cups rolled oats
- ½ cup almond milk
- 1 cup plain unsweetened yogurt
- 1 Tbsp maple syrup
- 1 tsp Beyond Good Pure Ground Vanilla Powder
- 1 tsp almond extract
To serve:
- 2 Tbsp almond butter
- a few fresh cherries, whole for garnish
- 2 Tbsp almond flakes
Method
Halve the cup of cherries and add them to a small pot with the juice of one lemon. Simmer for 3-4 minutes, until the cherries have softened, before removing from the heat and stirring in the chia seeds to form a cherry jam. Allow to cool completely before assembling. For the overnight oats, in a large bowl, combine the oats, milk and yogurt with the sweetener of your choice. Stir in the ground vanilla and almond extract. Allow the oats to chill overnight. To assemble, add a thick layer of the overnight oats to the bottom of a glass or jar, followed by a layer of cherry jam and a layer of almond butter. Top with almond flakes and garnish with a cherry.
Tip: This recipe can be modified to suit any fruity filling you desire!
