Dates & Sesame Trail Mix With No Added Sugar

Sweet dates, crunchy nuts, rich chocolate, and a pinch of vanilla that ties everything together. This no-added-sugar trail mix is proof that a few great ingredients can go a long way.

Makes: 4 cups 

 

INGREDIENTS

  • 1 tbsp coconut oil
  • ½ tsp Beyond Good Pure Ground Vanilla
  • 2 tsp sesame seeds
  • 1 cup (145g) whole almonds
  • 1 cup (130g) whole cashews
  • ½ cup (65g) pumpkin seeds
  • Pinch of sea salt flakes
  • ½ cup (30g) unsweetened coconut chips
  • 6 Medjool dates, pitted and roughly chopped
  • 2 Beyond Good 100% Cocoa Dates & Sesame bars (80g total), cubed 

 

METHOD

Preheat the oven to 325°F.

 

Place the coconut oil and pure ground vanilla in a small microwave-safe bowl and heat until just melted.

 

Spread the almonds, cashews, pumpkin seeds, and coconut chips onto a baking sheet. 

 

Drizzle with the coconut oil and toss to coat them well.

 

Toast for 8–10 minutes, stirring once halfway through, until fragrant and lightly golden.

 

Transfer the toasted nut mixture to a large bowl. Sprinkle over the sea salt and toss well to coat.

 

Allow the mixture to cool completely.

 

Fold through the chopped dates and chopped Beyond Good Dates & Sesame chocolate.

 

Serve immediately or store in an airtight container for up to one week.
