Brown Sugar and Vanilla Cookies

Rolling these cookies in vanilla sugar will give you a beautiful cracked look as well as an extra kick of vanilla.

Makes 18

Method

  1. Preheat the oven to 350°F and line three sheet pans with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In the bowl of a stand mixer fitted with a paddle attachment, or in a medium bowl using an electric beater, cream the butter, brown sugar, and vanilla until light and fluffy.
  4. Add the egg and egg yolk and beat on medium speed until combined.
  5. Add the flour mixture and mix until just combined.
  6. In a separate medium bowl, combine the granulated sugar and vanilla.
  7. Using a 2-tablespoon cookie scoop or tablespoon, form the cookies into balls and roll each ball in the vanilla sugar.
  8. Evenly space approximately 8 cookies per pan and bake one pan at a time, rotating halfway through.
  9. Before rotating the tray, lightly press the cookies down and return to the oven. Bake until the sides are set and the center is still soft for about 10 minutes.
  10. Transfer the cookies to a cooling rack to cool completely before storing them in an airtight container.
