Brown Sugar and Vanilla Cookies
Makes 18 Cookies
Ingredients
Cookies:
- 2 ½ cups all purpose flour
- ¾ tsp baking soda
- ¾ tsp kosher salt
- 2 sticks salted butter, at room temperature
- 1 cup soft brown sugar
- ½ tsp Beyond Good Pure Ground Vanilla
- 1 large egg with yolk
Vanilla Sugar:
- ½ tsp Beyond Good Pure Ground Vanilla
- ½ cup granulated sugar
Method
- Preheat the oven to 350°F and line three sheet pans with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In the bowl of a stand mixer fitted with a paddle attachment, or in a medium bowl using an electric beater, cream the butter, brown sugar, and vanilla until light and fluffy.
- Add the egg and egg yolk and beat on medium speed until combined.
- Add the flour mixture and mix until just combined.
- In a separate medium bowl, combine the granulated sugar and vanilla.
- Using a 2-tablespoon cookie scoop or tablespoon, form the cookies into balls and roll each ball in the vanilla sugar.
- Evenly space approximately 8 cookies per pan and bake one pan at a time, rotating halfway through.
- Before rotating the tray, lightly press the cookies down and return to the oven. Bake until the sides are set and the center is still soft for about 10 minutes.
- Transfer the cookies to a cooling rack to cool completely before storing them in an airtight container.
Rolling these cookies in vanilla sugar will give you a beautiful cracked look as well as an extra kick of vanilla.
